Pumpkin Pie Pancakes

Made with classic pumpkin pie ingredients, these golden brown pancakes are fluffy and warmly spiced.

‘Tis the season for pumpkins and this bright orange fruit (yes, it is a fruit), is not just for decoration or Jack-O-Lanterns. For the first time ever, I set out to buy one large pumpkin with the intention to actually cook with it; find other ways to utilize this large fruit. My goal; five dishes.

Ingredients

1 cup whole wheat flour
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 tsp ground cinnamon
1/4 tsp allspice
1/4 tsp ground ginger
1/4 cup brown sugar
1 cup puréed pumpkin
1 1/2 cups evaporated milk
2 eggs
2 tbsp butter, melted
1 tsp vanilla

Mix together dry ingredients in a medium sized bowl: flour; baking powder; baking soda; salt; brown sugar; cinnamon; allspice and ginger.

In a separate and large bowl, whisk together pumpkin, milk, eggs, butter and vanilla.

Add dry ingredients to wet ingredients and stir until mixed well and moist.

Preheat griddle and lightly coat with cooking spray. Spoon batter onto grill and cook until pancakes are golden brown and cooked through.

Serve immediately with your favourite toppings.

Preparation time: 10 minutes
Cook time: 15 minutes
Serves 4

  1. Wow these must be divine Eartha! We don’t have pumpkin puree in Greece though, can we make our own by mashing some pumpkin in a food processor? Does that sound like something that could work?

    • Hi guys! I so love these pancakes! It’s funny, I had a previous link on this post that explained how to make the puree but deleted it. Your method definitely works. What I’ve also done, is bake pieces of pumpkin in the oven and then blend in a food processor. I’ve also boiled the pumpkin and then blended it. Glad to hear you enjoyed the post.
