Dip Your Way Into The New Year With This Tasty Menu Option! Roasted Vegetable Dip

A great way to bring out the best flavour in red pepper, onion and zucchini is to roast them. These vegetables make a delicious dip blended with cream cheese and is perfect served on crackers. If you haven’t started planning your new years eve menu,  this is a tasty menu option that’s sure to please you and yours!

Fresh Ingredients:

2 large sweet red peppers
1 large zucchini
1 medium onion
1 tbsp olive oil (for this recipe I’ve also used a lemon flavoured olive oil)
1/2 tsp sea salt
1/2 tbsp freshly ground pepper
1 cup (8 oz.) plain cream cheese
Assorted crackers

Cut red peppers, zucchini and onion into 1 inch pieces. Place in a baking pan coated with cooking oil.

Combine the olive oil, salt and pepper. Drizzle over vegetables and toss to coat.

Bake uncovered, at 425°F for 25 – 30 minutes, or until tender, stirring occasionally. Cool at room temperature.

Place cream cheese and vegetables in a food processor. Cover and process until blended to desired consistency. Chill until it’s time to serve. Serve with an assortment of crackers.
