Cucumbers are a familiar vegetable in the produce section of most grocery stores. They belong to the same botanical family as melons (including watermelon and cantaloupe) and squashes (including summer squash, winter squash, zucchini and pumpkin). Here’s one way to enjoy that cool refreshing cucumber crunch along with the aroma of fresh mint.
Carpaccio traditionally refers to extremely thin slices of cured meat but, these days it’s a term that refers to thin slices of all sorts of items. Here are the ingredients you’ll need to prepare and serve this salad in under 10 minutes.
2 cups thinly sliced cucumber
1 cup thinly sliced radish
1 tablespoons extra virgin olive oil
1 tablespoon apple cider or white wine vinegar
1 tablespoon honey
1 tablespoon whole grain dijon mustard
2 tablespoons fresh mint, chopped
Coarse sea salt and freshly ground pepper, use as desired
Feta cheese, use as desired
Arrange cucumber and radish slices on serving plate(s). In a small bowl, whisk together olive oil, vinegar, honey, dijon mustard, salt and pepper. Drizzle dressing over vegetables. Sprinkle with feta cheese and mint over top and enjoy.
