More than just recipes, Cooking Green Goodness is here to inspire a healthy and happy relationship with food; green foods that is. The vibrant greens in this salad along with the smell of candied bacon cooking in the oven, will for sure bring out your happy! This is by far one of my favourite spinach salads to date and it might just change your life.
Here’s what you’ll need to get started:
6 – 8 strips bacon (your choice; for this recipe I used turkey bacon)
¼ cup maple syrup
½ tablespoon coarsely ground black pepper
12 cups baby spinach
1 cup radish, sliced
½ cup Balsamic Vinaigrette salad dressing
½ cup blue cheese, crumbled (add more as desired)
2 tablespoons chives, chopped
First step; prepare and cook your maple infused peppercorn bacon.
Preheat oven to 325°F. Line a baking tray with parchment paper. Lay bacon on baking tray. Bake for 8 – 10 minutes or until bacon is crispy. Remove from oven. Pour syrup over bacon and sprinkle with pepper. Return to oven and bake for another 5 – 8 minutes until bacon in bubbling and coated. Set aside to cool on the baking tray. Remove from baking tray and crumble.
Next, arrange your pre-washed spinach and radish in a large bowl. Toss with dressing. Top with bacon, blue cheese and chives, and serve.
