Roasting carrots brings out the most amazing flavours. This recipe post is for my sister-in-law Janice. Mother of 4 young, rowdy, adorable children – my niece and nephews. She loves these carrots as they’re absolutely wonderful and simple to make. You could also make a big pan of roasted root vegetables with this recipe.
Easy Roasted Carrots
Toss six baby carrots, halved lengthwise with the following ingredients:
- 3 teaspoons extra-virgin olive oil or coconut oil
- 1 ½ teaspoons dried oregano
- ½ teaspoon curry powder
- ½ teaspoon coarse sea salt (or to taste)
- ½ teaspoon white pepper
- 2 teaspoons freshly ground pepper, or as desired
- Pinch of cumin
DirectionsPlace in preheated oven at 350°F. Roast for 15 minutes, or until tender. It’s easy snacking!
Place carrots cut-side down on the grill. Grill for 4-5 minutes, or until the carrots develop sear marks and begin to soften. Flip and grill for another 4-5 minutes.
