Sweet Applesauce-Granola Cookie Ice Cream Sandwiches

Have scoops of butterscotch swirl ice cream ready to go and be prepared to indulge! These sweet, chunky, home made applesauce-granola cookies will transform into soft, chewy, ice cream sandwiches – a perfect treat. Things might, get a little messy.

Sweet Applesauce-Granola Cookie Ice Cream Sandwiches

Chunky, soft and chewy applesauce-granola cookies.


  • 1 cup packed brown sugar
  • ½ cup shortening
  • 1 teaspoon vanilla extract
  • 1 egg
  • ½ cup applesauce (sweetened applesauce will give you sweeter cookies)
  • 2 cups flour
  • 2 cups granola
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt


Heat oven to 350°F. Beat the brown sugar, shortening, vanilla and egg in a large bowl. Mix with a spoon, or a mixer on medium speed. Stir in the remaining ingredients.

Drop rounded tablespoonfuls of the cookie dough about 2 inches apart onto an ungreased cookie sheet. Bake 10 – 12 minutes or until golden brown. Remove from oven and let cool for 2 minutes. Remove from cookie sheet with a spatula, to wire rack.

Place a large scoop of butterscotch ice cream between two of these soft, chunky golden brown cookies, and enjoy this sweet treat!

Add crushed pecans in your cookie dough for a crunchier taste. Sweet coconut flakes is also a great addition

Make it a breakfast event. Enjoy these cookies warm, with a tea or espresso.
