The cherished memories of a young child’s home made cards received throughout the years are often saved and neatly stored away in a box. These cards are filled with glittered hearts, cutouts, smiles, humour, no rhyme but reasons, demands, errors, your child’s ever growing personality, and awareness. Personally, I find my collection of home made cards – some of which are being shared today – difficult to toss because of the care and thoughtfulness that went into making them. So, let the warm maple syrup flow over golden brown pancakes as sweet as these words, handwritten from a child’s expressive thoughts of a mother’s love. May the warmth flow over the freshest berries, as you too reflect upon the fruits of your labour. Happy Mother’s Day.

BEST MOM EVER Makes all her daughters’s friends jealous with her perceived “coolness.”

Thank you, for being the smartest, most driven, successful, and beautiful mother inside and out. I can’t explain how greatful [sic] I am for the life you have given Shaian and I. I love you!!
Child 2 Writes: “How to Make Jerk Fries”
I’m telling you how to make famous Jerk Fries. Jerk Fries are made of potatoes and jerk sauce that we use to season jerk chicken. Jerk sauce is made out of all kinds of spices. WARNING! Be careful, the more sauce you add the spicier it gets. Jerk Fries are fries cut from potatoes but instead of having plain fries add some jerk sauce. This recipe will help you imagine you’re on a nice Caribbean island.
(side note: This was a school project I was completely unaware of until I saw the poster filled with detailed step by step instructions and pics of how to make jerk fries – a reminder that children watch your every move. They also grow up really fast.)
Child 1 Writes: “Don’t you want to have a nice kid with nice shoes?”
Dear Mommy, you are the best mom ever. You are also ruff-tastick. I hope you like my dog. My dog thinks you are the best mom ever. He also says you are nice. My dog also wants to be yours one day. Also mommy, I brought proff [sic] that my outdoor shoes are messed up. If it is a rainy day or windy day the wind goes inside my shoes. Also they are not decent.
P.S. don’t you want me to look decent and not have messed up shoes? Don’t you wan’t to have a nice kid with nice shoes? So please, Shanice gets new shoes.
(side note: This kid’s a comedian, and wrecks a lot of shoes! It’s baffling. I had a good chuckle reading this one.)

#1 Mom, Your [sic] the best. Eartha, beautiful, caring, thinks everyone in our family is the best. Wants a good career. Goes on the computer a lot. Always says “you did good.”
Dear Mom, I hope you love my card. I hope you love it just like me.
(side note: Holy guilt trip reading this one.)

Sweet Oatmeal Banana Pecan Pancakes
Golden brown and delicious. Let the warm maple syrup flow!
- 1 cup whole wheat flour
- ½ cup oatmeal
- 1 tablespoon baking powder
- 1 tablespoon brown sugar
- ½ teaspoon ground cinnamon
- Pinch of sea salt
- 1 ½ cups almond milk
- 1 ripe banana
- 1 tablespoon chopped pecan pieces
- Warm maple syrup (as desired)
In a large bowl, mix together the flour, oatmeal, baking powder, sugar, cinnamon and salt. Set aside.
Combine the banana and almond milk in a food processor or blender, and process until smooth. Add the blended mixture to the dry ingredients and stir until combined. Add the pecan pieces.
Add additional almond milk if the batter seems too thick. The batter should pour easily.
Heat a lightly oiled griddle or frying pan on low to medium heat. Pour the batter onto the griddle leaving room between pancakes. Cooks until bubbles appear in in the center of the pancakes, then flip and continue cooking until golden brown. About 3 – 5 minutes each side.
Serve with warm maple syrup, fresh berries, or a sweet apple slaw.
Sweet Apple Slaw
- 2 medium-sized gala apples, grated or thinly sliced
- ½ cup pecans, chopped and toasted
- ¼ cup dried raisins
- 1 tablespoon lemon juice, freshly squeezed
- 2 tablespoons maple syrup
Directions: Combine all ingredients in a bowl. Alternatively, substitute the pecans and dried raisins with granola.
